“What’s for dinner?” is one question that can be a little trickier to answer on Meatless Monday. Take a cue from supermodel Heidi Klum. She may be German but this international catwalker knows how to whip up South of the Border fare her kids go bananas for. Think tacos, cactus salad, and fresh salsa. But as any foodie can attest, authentic Mexican dishes all come down to one key element: the guac. Luckily, Klum has a zesty go-to guacamole recipe that’s a real people-pleaser. Heidi Klum’s Guacamole
4 ripe avocados, halved, pitted and peeled
2 small tomatoes, seeded and chopped
1 small onion, chopped
3 tbsp fresh lime juice
1 small serrano chile, seeded and chopped (optional)
Salt to taste
Coarsely mash the avocados. Then in a bowl combine mashed avocados, tomatoes, onion and lime juice. Stir in chile (if using). Season with salt. Cover bowl with plastic wrap and refrigerate 30 minutes. Makes about 3 cups.
