On Thanksgiving you talk turkey, on Christmas it’s often a roast or a lasagne or yet another turkey. But come Easter, for most families, it’s all about lamb, a symbol of spring and a succulent roast that couldn’t be simpler once you know how to season and cook it properly. A glorious glazed ham is another hallmark of the Easter table, sweet with syrup and served with springtime sides like fresh greens and roasted potatoes.
