For those of us who care about making healthy snack choices, there’s a lot of requisites those snacks have to live up to. We expect them to be filling, quick to make, portable, packed with nutrients, and, sometimes, they even have to work with our dietary restrictions. It’s a lot to ask!
Like Tracy Anderson and Gwyneth Paltrow, among others, we turn to smoothies a lot here at Elizabeth Street. Warm weather and the fresh new bounty at the farmer’s market is even more of a reason to dust off the blender. This vegan recipe, from one of our favorite fashion gurus, Corri McFadden, takes full advantage of those juicy strawberries we’re so happy to have back after a long winter.
“This vegan treat is my favorite post workout snack,” says Corri. “I love that I can take it on the go, so even if I’m in a rush I’m not missing breakfast.”
Vegan Strawberry Oatmeal Smoothie
½ cup rolled oats
1 banana, sliced
14 frozen or fresh strawberries
1 1/2 teaspoons sugar
1 cup soy milk
1/2 teaspoon vanilla extract
Place all the ingredients in a blender and blend together.
Garnish with strawberries and serve.
