It Feels Like Summer With This Easy Weeknight Fish Dinner

We often forget about fish when we think of weeknight dinners, constantly falling back on our tried-and-true chicken dishes, crockpot favorites, and pasta staples. But fish (and shellfish) options can be amongst the healthiest and easiest dinners to whip up for the family.

We decided not to wait until July for this summer favorite when Yunnie Kim Morena, who has recently taken over and overhauled her family’s restaurant, The Albright, on Santa Monica’s famed pier, gave us this recipe. It’s at once decadent and unpretentious, simple and satisfying. Sure, it’s not cheap because of its star ingredient–lobster–but we’re not telling you to make this every week, though you may want to!

“This recipe is fast and versatile,” says Yunnie. “We love it served on a bun but can be served over a bed of greens or even served on a cracker for an appetizer.”

Lobster Rolls

Makes 2-3 servings
1 1/2 lb cooked lobster meat
1/4 cup finely diced celery
1 tsp celery salt
1/4 cup melted butter
1/4 cup real mayonnaise
zest of 1 lemon
1/2 lemon juice
1 tablespoon of chives

Mix all the above ingredients together. Serve on lightly buttered and toasted New England style hot dog bun. Lobster mixture can be made up to 24 hours in advance and refrigerated.
