Add This Recipe for Adobo Lime Chicken Tacos to Your Repertoire ASAP!

Once my husband and I find a meal we love, we stick to it. It’s almost obnoxious. We mention it in casual conversation to anyone who will listen, kinda like our equivalent to name dropping. Adobo lime chicken tacos definitely fall into this category. They are fresh, healthy, and easy to whip up, making them a staple around here as soon as warm weather rolls in.

Add a patio, friends, drinks and a cool breeze and you’ve got yourself a good time. Once you fall in love with them, you totally have permission to “name drop” at the next playdate you attend. I found my favorite recipe on Health.com and adapted it to my family’s tastes. We like ours with extra cilantro.

Adobo Lime Chicken Tacos

INGREDIENTS
2 cups skinless, boneless chicken breasts, shredded
3 tablespoons chopped fresh cilantro, divided
2 tablespoons light sour cream
2 tablespoons fresh lime juice
2 tablespoons adobo sauce
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper

1 cup packaged broccoli slaw mix
1 tablespoon seasoned rice vinegar
1/2 tomato, diced

8 taco shells
salsa
1 avocado, sliced
shredded cheese

DIRECTIONS
1. Toss chicken with 2 tablespoons chopped cilantro and the next 5 ingredients (through black pepper) in a medium bowl.

2. Toss slaw mix with rice vinegar, tomato, and remaining 1 tablespoon cilantro. Divide chicken and slaw evenly among taco shells. Serve with salsa, shredded cheese, and sliced avocado.
Yield: 4 servings (2 tacos each)
