On a weeknight, when we are bone-tired and slapped with relentless end-of-day fatigue, we are all about keeping it simple in the kitchen. One of the advantages of cooking vegetarian meals is that they generally require less time and, if you choose your recipes wisely and opt for the occasional shortcut (think jarred sauce)–minimal effort.
Valentine’s Day, which falls on a Friday this year, is the last night we want to spend slaving over a hot stove when we could be snuggling up with our sweetie or our whole family.
Even if, like me, you’re not a staunch vegetarian, by now you should at least be aware that eating meat at every meal is not a necessity; in fact, it’s probably not a wise idea–for your waistline or as far as the delicate ecosystem is concerned.
